There is a FB group called Grand Pair Rents which caters to expats and their families, but might be worth a look. I noticed a couple of rentals come up over NY this weekend.
We have rented out using this, and normally ask for a 50% deposit but you do have to be trusting

Sydney is insane on NYE - everything get booked out very early in the year, so you may need to lower your expectations. We don't go to the city, we watch the 9pm fireworks on the beach at Coogee (it's fun sitting on the sand and listening to the ocean in the dark) and then go home to watch the main fireworks on TV.

And the (really good with amazing harbour views) YHA has just a couple of rooms left:

We're actually going away NYD for 4 nights and we're in Manly! But no good for NYE, sorry!
