mckenzie Fri 09-Jan-09 18:16:12

tonight we had beef and vegetable stew thingy with couscous (new cook book for my birthday).
Last night was chicken in breadcrumbs (the DCs love helping to make them).
Night before was M&S fish (cheating night).
Tomorrow is a new recipe card from Waitrose, Oriental fish was pak choi.
Sunday - roast probably.

I also do a mean chicken, lentil and cashew nut curry (another Waitrose recipe), Lentil bake (to use up any left over vegetables), shepherds pie with a difference (topping made with sweet pots and parsnips so no need for butter when mashing and I make two and put one in the freezer).

We also love chilli, lamb tagine, stuffed butternut squash and good old spag bog!!

Molesworth Fri 09-Jan-09 18:34:22

something casseroley (goulash meatballs, chicken casserole with dumplings, bigos and potato pancakes, homemade veg soup with crusty bread)

something ricey (kedgeree, curry)

something mince based (spag bol, chilli, cottage pie)

something sausagey (sausage and mash, toad in the hole)

something eggy (omelettes, quiche)

something potatoey (baked potatoes with beans/cheese/coleslaw, homity pies, bubble and squeak)

something roasty (good meat + usual trimmings)

Horton Fri 09-Jan-09 19:12:26

Stew (beef, onions, carrots, celery, chickpeas, random veg)

Sausages with mash/potato wedges/fried potatoes and gravy and veg

Omelette with hefty helping of 'hidden' veg. It's not really hidden but DD can't see it as such so doesn't complain.

Pasta with tomato/veg sauce. Sometimes sauce has bacon in it, sometimes I make meatballs.

Pizza (homemade, cheap, veggie)

Curry with rice and dal and raita with cucumber and other veg or fruit

Roast meat and usual bits

Pasta with cream, cheese, bacon and broccoli

Cauliflower cheese with bacon bits and some kind of potato

Lentils done with tomatoes, garlic, carrots, celery and leeks, served with rice or bread

Lentil Bake

I soften some onions to start with and some garlic and chopped carrots then i add a selection of whatever veg I have around, things like courgette, peppers, mushrooms, leeks (all chopped).

Let the veg cook for a bit (about 5 mins) then add the lentils and stock (I usually allow about 3 oz lentils per person and about 1/4 pint stock per person). If I'm using red lentils I'll add a can of tomatoes but not if I'm using green tomatoes as the flavours clash. Add a bay leave or two, bouguet garni (or separate herbs if you prefer) and some pepper.

Bring to the boil, cover and simmer until the lentils are cooked, about 25 mins (check every now and then to make sure you have enough liquid in pan).

I then put this into ovenproof dish and cover with par boiled sliced potatoes, dotted with butter and sometimes grated cheese on top. If it's green lentils then mash works well. Pop into oven for about 30 mins.

My children love it. I can't take the credit for the recipe though - it was given to me by my dear friend Claire.
