Bolognese/ragu. Beef stew with onions, carrots, garlic, beef stock, some tomato purée and a bay leaf and serve with baked potatoes or mash - you can add potato to it once defrosted and a pastry crust for a meat and potato pie to ring the changes.

Curry - you might find the spices become stronger after freezing, so go easy on the chilli powder or flakes, you can always add more when you're re-heating it. Basically anything you stew/braise will be fine.

Baking - you can freeze mince pies if you make your own. Also shortbread and pastry can be frozen once mixed then thaw overnight, roll out and bake - make sure you label them properly to avoid confusion. Sponge cakes can be frozen, but buns/cupcakes in individual paper cases will come away from the paper once thawed.

In advance of Christmas dinner you can make your stock for the gravy and freeze that. Same with cranberry sauce.
