What dried spices do you use most?

Hi,

I have Chinese Five Spice, Cajun (favourite), Garlic Salt.
These are my essentials.

I mainly use them for chicken, pork chops and the 5 spice for stir fries.

What can you not live without?

Cumin, cinnamon and ginger.

Cumin because it's earthy and gives a really nice flavour to spicy things.

Cinnamon I like because it can be sweet or savoury, it goes well in Chilli and (surprisingly) with tomato in fish dishes. Not to keen on it as a sweet spice but will sometimes add to a cake or something.

Ginger again it's multi use. I love it in stir fries, especially with chicken. Love ginger cake and ginger biscuits/gingerbread too.

All purpose seasoning, hot and spicy seasoning, curry powder, cinnamon, nutmeg, pimento and thyme.

I also could not live without scotch bonnet, spring onions and garlic.

With all of that I can make everything we eat.

Smoked paprika and black pepper on homemade wedges are DP's favourite thing I cook. I'll spend hours on a complicated pudding, or juggle a tiny kitchen and a full roast, but he'd eat wedges every day if given half a chance.

I have smoked paprika - thinking of making a goulash. Never thought of using them on wedges.. out pops the actifry Grin.
What is mustard seed nice in? I use the wholegrain when roasting a beef joint.
Must get cumin.

Coriander (ground)
Cardamom seeds
Cinnamon

Pepper
All spice
Turmeric
Five spice
Fenugreek seeds
Cloves
Nutmeg
Star anise
All purpose seasoning

I'm not really sure if we have non-essentials after that... there are other spices in the cupboard that we probably wouldn't buy again purely for not needing them much. I haven't included herbs and we use a scotch bonnet sauce for heat typically.

Chilli staples of cumin, paprika, cayenne.
Mixed spice & nutmeg for rock buns.
Turmeric, coriander, bay leaves and garam masala cover my other quick & easy curry recipes.

I've always liked you Remus - your books, music and now your spices all point towards you being a good person. In answer OP, I use mustard seeds in Gudjerati (sp?) style cabbage and carrot, and cabbage & peas (both Madhur J recipes). I wouldn't call them essential for us though.
