My standards for the freezer are bolognaose, chilli (bean or meat, depending on budget), curry and fallafels. I just use the normal recepies.

Homestyle Sauce:
Clove garlic (optional)
1 onion
1 large carrot
1 stick celery (optional)
8 slices bacon (smoked/Unsmoked as per your preference)
1 pint water
Tomato Puree

Method:
Chop/press garlic
Dice onion
Chop celery
Grate carrot
Chunk bacon

Fry garlic & onion in oil until soft.
Add carrot & celery and cook for 5 mins stirring occasionally
Add bacon and cook for another 5 mins still stirring occasionally
(mixture should be squishy-ish)
add water and a good dollop of puree (2 tbsp approx, but you can add more later for taste)
Let reduce until mixture is sludgy, season to taste with salt & pepper.

Serve with pasta or on a baked potato.

Freeze in portions and defrost before reheating.

I do something similar to Fuzzled, usually when there is a load of veg I need to use up in the fridge and cannot face another veg curry!

Although I don't bother defrosting, and melt on the hob and heat for a bit.
