What can I do with leftover roast chicken?

There is plenty of breast meat from the roast yesterday, enough to feed two adults? Can I put it in a curry and if so any easy curry recipes out there?

Yes, in a curry or Mexican (you can buy those packs with spices, wraps etc.) you just add the chicken to it, like you can make chicken fajitas and have it with rice. You can also make a chicken pie. I would line a tin with puff pastry, fill it with the chicken and some veg, line with pastry, prick some holes or use pastry funnel, put some egg yolk or milk on top to brown the pastry nicely and bake it.

How about a nice thick chicken soup? Cook piles of veg then liquidize with the chicken and some herbs, heat slowly in a pan adding veg cubes/cornflour to thicken.

Chicken fajitas is a good idea- when we have them we have bowls of cold chicken, chopped salad, sour cream and salsa sauce on the table plus a plate of wraps. Everyone piles in and builds their own fajitas.

sorry didn't read OP-you wanted curry recipes. How about a thai green curry? Or butter chicken? There is a nice butter chicken recipe here.

I made a big thck chunky soup with mine today and its so thick if i keep adding stock to it i thnk i might get a fortnight out of it lol!

I like a good chicken pie myself, in a white sauce with sauteed onions or a gravy sauce with onions and either mashed potato on top or pastry on top.


Or a chicken lasagne


Chicken curry easy. Just use your favourite chicken curry recipe to make the sauce.


Thai green curry is a good idea too.


Personally though, I'd make a lovely chicken pie with swede and mashed potato on the top.

I would just stand up at the fridge and eat it, frankly.

LOVE leftover chicken.

Easy curry recipe?

  • chop an onion and fry it on oil for about 20 mins until goes brown

along with bay leaf and cinammon stick
-liquidise 4 cloves of garlic and a thumb of ginger
and add to onions, stir for 5 mns

-add heaped teaspoon of ground coriander, cumin, turmeric and a couple of chillis (can add as much chilli as you like for heat). Stir for about 5 mins.

-add tin toms and large pinch hot paprika/cayenne

  • add shredded chicken, cover with enough chicken stock to cover, simmer for about 30 mins.

if its just me i fry mine in an onion and egg and make a foo yung like form the chinese. In general though im with theposter who would just scran it over the fridge!

Hmm yes foo yong is brilliant - especially if you are on that bastard dukan diet.

Fry an onion - splash with a load of light soy sauce and some 5 spice.

Shive the chicken in with.

Beat a couple of eggs and then throw over rest, keep stirring so it scrambles.

Bloody lovely.

Egg foo yung is brilliant.

i have been on that GODFORSAKEN dukan diet for 3 weeks now. I was so sick of chicken and omelettes. But now am living on egg foo yung - it is delicious.

I do add about a pint of soy sauce to it though, is probably got my year's quote of salt in.

But is is so quick and easy.

Am going to try it with steak strips later.

Oh it is so boring.

I have lost about 10lbs in 3 weeks.

But I had a roast dinner at the weekend - god those roast spuds were divine.

And a big packet of doritos yesterday. And a twix.

Aiming to lose another 10lb to get under 10stone for the first time in my life.

I've been very lazy and just copied and pasted email from my aunt..It's a very winter comforting kind of stewy curry..We love it. And its better with leftover roast than with breast. Let me know if you try it.

Was just perfect, curry - but not hot enough to hit the back of your throat if you get me, which is great for us as John isn't too keen on overly hot dishes. I assume adding more of the spices would affect this to personal taste. It was quite "peppery" but I love black pepper so adjust to your own liking.

If not using left over chicken, then fry 2 chicken breasts - diced - until cooked, set aside.

2 large onions thickly sliced
1 clove garlic finely chopped or crushed

Fry these together gently in 2 tblsp olive oil until onion starts to soften. Don't overcook, onions in curry should have a bite to them I think, the onion in the Pagar Garden chicken curry (yum) is positively crunchy!
Anyway I digress...

Make up 1 pint of stock using boiling water and a beef stock cube.

Combine the following in a small bowl, add to the saucepan and stir.

1 tsp medium curry powder
1 tsp ground ginger
1 tsp freshly ground black pepper (fgbp in the future!)
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander

(Recipe also called for 1 tsp turmeric but I didn't have any, will get some for next time though and will let you know if there's much of a difference) - My teaspoons were rounded but not heaped.

Immediately add the stock.

Then add a tin of chopped tomatoes and the left-over chicken pieces or the diced chicken breasts cooked earlier.

Bring to the boil, then simmer until the mixture thickens to your desired consistency - this took me a half hour which was the same length of time it took the brown rice to cook that I served it with.
