Granite worktops - polished or satin 'honed' finish

This sounds like such an unimportant thing to be fretting about but having selection a pale-ish grey (Duke White) granite for our new kitchen (grey cabinets) am stressing over the finish. We had polished black previously, seemingly indestructible/stain proof, never maintained it other than keeping it clean/shiny. Now I am told/advised the glossy look is out and have been recommended to go with contemporary 'satinato' finish to fit in with my new decor style but it seems more porous and I hear these pale colours need to be regularly re-sealed. Any experience/advice anyone has greatly appreciated please. Many thanks!
