Ive been googling but am still not sure.

Is it

knotting solution
primer (water or oil based?)
undercoat (can that be the eggshell too?
eggshell

Also if I sand down old gloss can I just paint 2 coats of eggshell - no undercoat?

No wonder the decorating quotes were so high - it'll take me for ever!

Invest in a couple of cans of Zinsser primers - they do them for bare wood and painted wood. No knotting, no sanding, no separate undercoat plus they dry quickly.

Just a thought - I painted new, bare architrave and skirtings and gave them a coat of Zinsser BIN 123 then lightly sanded the rough bits once that was dry. It shows where you need to sand, doesn't take much effort and you get a smooth result. Then a second coat of primer. It's not hard work. No need to sand painted wood unless it's chipped and needs smoothing out.
