The best person to ask is your own optician. They will know not only your Rx but more about you and could quickly check which compromise is best for you.
Your prescription indicates some (lowish -the 0.75 bit) astigmatism in the right eye and just the tiniest astigmatism ( 0.25 )for the left eye. Swimming goggles usually only come in a simpler spherical format. If you are ordering spherical lenses (without the astigmatic correction) for your swimming goggles the right eye will be a little blurred (but should be tolerable for most people) whilst the left should be clear enough in a sphere.
A person with only a simple spherical Rx would order the sphere ( the first figure in your more complex sphere/cylindrical corection). This would also work fine for a very low cylinder like your left eye ordering left -2.50D should work. The right is more tricky as -1.75 ( the sphere alone) is likely to be a little weak - but adding the 2 together (-1.75 + -0.75 = -2.50) will be too strong. My guess is that your optician will suggest something in between!
HTH!
