for example, if i set up my Amazon account to remember my password, does that mean that someone else on another computer can log in using my email address, and they will automatically be able to access my account?

No, definitely not. It would be a massive security risk. Just to make sure, I just tried to log in to my Amazon account from my iPad, with just my email. I couldn't smile

Sorry, totally misread your question & thought you were talking about the same computer blush and I can't even blame it on being awake in the middle of the night!

No as the previous poster said, not if it's on a different computer. Only if it's the same one.
