Courgette cake?! Tell me more!

Thought I'd start a new thread on interesting things you can make / do with courgettes. Gasp! Ladies, please keep it clean. I'm at an impressionable age.

I'm thinking of using one as a draft excluder.
Ok. Tell me how you make courgette cake, pleeeeease!

Google is possibly your friend - even Nigella has a recipe!

Can't say I'm a fan of carrot cake or potato scones so have no experience of winning ways with veg :)

Courgette and feta muffins. Google for a recipe. They are gorgeous.

American recipe so you need cup measurements but dead easy and very yummy:
2 cups plain flour
2 cups caster sugar
1 tbsp cinnamon
2 tsp bicarbonate of soda
1 tsp baking powder
1 cup veg oil
2 tsp vanilla essence
3 eggs
2 cups grated courgette
1 cup raisins
1 cup chopped nuts (optional)

In large bowl combine all ingredients except raisins, nuts (if using) & courgette. Mix well (add a splash of milk if too thick) then stir in rest. Pour into ungreased 10in pan (I use a springform to make it easier to get out). Bake for about an hour at 180 or until firm and skewer comes out clean.

Try this cookbook by Harry Eastwood - lots of great cake, cupcake and muffin recipes that use grated vegetables, including courgettes, as key ingredients.
Red Velvet and Chocolate Heartache

I just made her Strawberries and Cream cupcakes last week using grated courgette and they were fantastic!

This is so, so good. I'll be making some soon to put on the shelf for the cooler months.
Often had it with cheese and it was delicious with Nigella's Supper Onion Pie. Great with cold cooked meats.

I gave dd's school a recipe for courgette cake for their cook book, basically replace carrot in a carrot cake. DD said the dinner lady cooked the recipes to try them and she did the "green cake" twice! It can't be that bad then!
We do courgette fritters with garlic in the batter, or make chutney. Courgettes make great salt& vinegar crisps too.
