crispy/crunchy lettuce varieties please

I'm GYO as part of a series of features, all going well, but the lettuces I got are not my sort - I took a gamble and they are all butterhead etc when what I wanted was compact head, crispy and crunchy (I'm new to this)

So, will start again, with seeds, can anyone recommend varieties please?

Also, any difference betweemn water cress and land cress really?

Even the Pearl Gem lettuces are big and soft, not small and compact....
