How much fresh yeast should you use in a bread recipe if the original recipe specifies a teaspoon of dry yeast?

Does anyone know? My local supermarket was doing fresh yeast this morning so I bought some, but cannot now remember how to use it or how much to use!

Thats funny, I just made bread for the first time yesterday!!! I followed a Jamie Oliver recipe and used dried yeast although the recipe suggests you can use fresh yeast instead. The quantities are as follows:-

30g/1oz fresh yeast
30g/1oz honey or sugar
625ml water
500g strong flour
30g salt

Ooh, honey. Never seen that before. Is this for a white loaf or a brown one, wilsony?

About the size of half a thumb i reckon.
God,spent the last month trekking around looking for fresh yeast! Did one of the bakers just give it to you (iyswim!) or was it for sale?

I fancy having a bash at sourdough bread,where you basically harness yeast in the air.

('harness yeast' lol to myself)

Either or I think, recipe just says strong flour so presumably you could choose wholemeal instead of white if you wanted to have brown loaf. Turned out rather nice though I say so myself (I made white!).

Believe it or not it was crappy old Safeway/ Morrisons. I was astounded. It was 14p because the sell by date was today.

I hope this helps. You should always use twice as much fresh yeast as dried, so two teaspoons of fresh should do it. Problem is it is difficult to ascertain what is meant by a teaspoon when you are talking about something globular(!) like fresh yeast. But lets not get too academic, (although I suppose you could weigh it, if you have any accurate scales and if you were so inclined) because I am often very careless with yeast, and I have been doing yeasty cookery for years with not many probs.
I don't know if you are in the UK, but the main problem you are going to encounter with your bread at the moment is the humid weather!
