...cabbage. What should I do with it? Last time I had some, I cooked like regular cabbage in a roast dinner - and it turned the whole dinner an interesting shade of pink!! So I think it should be cooked some other way - any ideas anyone?

TIA

Red cabbage can be stir-fried - try it stir-fried with garlic and rosemary, it's lovely.

Or pickle it in vinegar.

Or braise it

Or stir-fry it with apples

Red Cabbage Hotpot is nice for when the weather gets cold (can you tell I like red cabbage?).

You could add cooked sausages to this as well.

2 onions, sliced
1lb red cabbage, shredded
Half a pint of cider
2 tablespoons cider vinegar
2 tablespoons chopped mixed herbs
2oz sultanas
1 large aubergine, chopped (or other veg you like)
2 small courgettes, chopped (or other veg)
2 apples, cored and chopped
8oz potatoes, parboiled and sliced
Half an ounce margarine

Heat the oil in a pan and fry the onion until translucent. Add the cabbage and cook over a high heat for about 5 minutes, stirring

Add the cider, vinegar, herbs and sultanas, season with salt and pepper and cook for 10 minutes, stirring occasionally.

Add the other vegetables, cover, and cook for 10 minutes. Add the apple, and heat through.

Transfer to an ovenproof dish, and top with the slices of potatoes, overlapping them so that the top is completely covered. Sprinkle with salt, and dot with margarine.

Cover, and cook at 190C for about 40 minutes. Remove the lid, then replace in the oven for the top to brown.

Or there's Spiced Red Cabbage with Pine Nuts and Apricots

2 tablespoons oil
12 oz red cabbage, shredded
2oz pine nuts
3oz dried apricots, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
Grated rind and juice of 1 orange
1 tablespoon raspberry vinegar (cider vinegar would do)
Quarter of a pint dry cider (have you noticed how many of these recipes contain cider? )

Heat the oil and stir in the cabbage to coat in oil, add the pine nuts, apricots, spices, salt and pepper and stir-fry for 5 minutes

Add the orange rind and juice, vinegar and cider. Bting to the boil, then cover and simmer for about 25 minutes.

Nice as a side veg, or light meal with lots of crusty bread.
