My favourite fish recipe at the moment is AK's creamy seafood.

Not at home at the moment so will tell you from memory.

Cod and salmon fillets, black peppercorns. Poached in milk for about 5 mins. Remove fish, strain milk (save to make sauce).

Melt butter in a pan (I tend to use the one I poached the fish in)and a chopped onion and some flour. Cook for a minute. Slowly add the milk. Stir until thick. Add the fish fillets, some frozen peas and prawns. Cook for a few mins, until prawns and peas heated through. You can add some grated cheese when you serve.

Other fav (me and DH). Rainbow trout, gutted and boned.

Chop an onion and some bacon. Gently cook for about 5mins. Put aside to cool. When cool mix in cottage cheese. Stuff mixture into fish. Cover with foil and bake for 20mins. Simply and yummy.

Try curry fish pie,
cook some onions in oil,
add some curry powder and cook for a minute,
add fish(1lb for 4 people),( any kind of white fish, coley is cheap).
add a can of condensed mushroom soup and some frozen peas,
put in an oven proof dish and top with mashed potatoes,
cook on gas mark 5 for 40 minutes.
You can adjust quantities to suit you,

quick, easy, and delicious

Well I made a green lentil and sweet potato curry out of a M&S low fat recpies cook book this week and it came out really boring. Tasted a treat once we'd mixed a Patak's curry sauce out of a jar with it

I made a thai fish curry yesterday that went down well with Hubby...
I used...
small fried chopped onions
Cod can't remember how much.. but it was filleted
barts coconut cream...not milk as the cream is thicker
Barts red thai curry paste
I cooked the cod in the microwave then added it to the cooked onions
add the thai curry paste, and let that soak in the fish
add the coconut cream and let it cook through..
We had it with rice with chopped runnerbeans and sweet corn in it...
and some prawn crackers and chilli dip on the side

Delicious........MMMMMMMMMMMMMMMM

and quick to do...
