I'm sure there is a recipe for this somewhere as I'm positive I made it at school.

Do you mean soda bread? Or potato bread perhaps?

A friend makes a beer bread which might not be quite so scary to make as sourdough, but is a much firmer bread. I found this which looks similar beer bread

My Grandmother's recipe:

Irish Soda bread

Into a large mixing bowl, sift 8oz plain white flour, 8oz plain wholemeal flour, 1oz oatbran (from health food shops), 1tsp salt, and 1tsp bicarbonate of soda.
In a jug, whisk a 142ml carton of soured cream with 5floz of water. Mix this into the dry ingredients, adding 3-4 tbsp water if needed, to make a firm dough. Turn out onto a lightly floured surface and knead gently for a couple of minutes. Form into a round ball and make a very deep cross in the top, all the way across the dough. Place onto a baking tray and bake at gas mark 7 for 25-30 minutes or until well risen.
