This is yummy - JAPANESE CHICKEN TERIYAKI
free on a red day
57ml/ 2 floz of soy sauce
57ml/ 2 floz of worcestershire sauce
2 tablespoons red wine vinegar
2 tablespoons of sweetner
2 garlic cloves - crushed
4 chicken breasts (boned, grilled and cut into thin strips)
2 - 3 spring onions, sliced
1 red pepper

STEP ONE Heat soy sauce, worcesterchire sauce, redwine vinegar, sweetner and garlic in a pan for 2 minutes

STEP TWO Stir in the chicken strips, spring onion and pepper. cook, stirring frequently, for 4-5 minutes, until the sauce has thickened. serve immediately - lovely with salad or bean sprouts

SWEET AND SOUR CHICKEN
half a sin
1 lb of chicken skinned boned and sliced
4 spring onions, chopped
2 garlic cloves, crushed
salt and pepper
1 tablespoon dry sherry
2 tablespoons soy sauce
2 tablespoons sweetner
2 tablespoons wine vinegar
chilli powder to taste
2 tablespoons tomato puree

STEP ONE put chicken in bowl with onion and garlice. season with salt pepper and pour over sherry. coat the chicken in the marinade and set aside in a cool place to marinade for 15 minutes
STEP TWO put chicken and marinade mix into non stick frying pan and cook for about 4 minutes until chicken is tender and cooked. Keep warm.
STEP THREE Put the remaining ingrediants in a saucepan, mix and bring to the boil. reduce the heat and simmer gently for 3 minutes. stir i the chicken and spring onions into the sauce and serve with veg or salad.

LAMB STEAKS WITH RED PEPPER SAUCE
SIN FREE

4 lean lamb steaks
1 onion, finely chopped
1 garlic clove, crushed
2 red peppers, deseeded, skinned and chopped
salt
cayenne pepper
1 14 oz/ 397g can of chopped tomatoes

STEP ONE cook the lamb steaks inder preheated grill, turn once and cook
STEP TWO meanwhile dry fry the onion and garlice until soft. add remaining ingredients and bring to boil and simmer for about 5 minutes. remove from the heat, liquidize until smooth and then reheat gently
STEP THREE place lamb steak on plate pour the sauce around

I know that there seems a lot of ingredients, but what I have found is that once you buy these things (especially the things that add flavour) it helps to make boring food interesting and stops you getting bored!

WEST AFRICAN CURRY 1/2 sin
1 Large onion, chopped
1 teaspoon chilli powder
1 teaspoon curry powder
1 teaspoon turmeric
1 teaspoon corriander
1 teaspoon cumin
1 teaspoon garam masala
1 beef cube (crumbled)
1 tablespoon tomato puree
1 garlic clove
1 397g can chopped tomatoes
454g / 1lb lean stewing beef (fat removed)
salt and pepper

STEP ONE Dry fry onion over low heat. while it is cooking, mix the chilli powder, curry powder, turmeric, coriander, cumin, garam masala and stock cube together in a bowl. add tomatoe puree

STEP TWO when onions are brown, add the garlic and cook gently for 2 minutes
STEP THREE add spice mixture and fry for a few minutes, stirring. stir in tomatoes and cook for 2 minutes still stirring
STEP FOUR finally add cubed beef, stir well and season with salt and pepper. turn heat down very low, cover the pan and simmer gently for 1 - 1 1/4 hours, adding small amounts of water as required until meat is tender.

Loads of ingredients but so tasty - it is worth it!!

LAMB AND APRICOT CURRY 5 SINS

687G / 1 1/2 LB OF LEAN LAMB, DICED
2 CHOPPED ONIONS
20 CLOSED-CUP MUSHROOMS, halved
1 chicken stock cube
2 level tablespoons mango chutney
2 tablespoons madras curry paste
2 medium carrots, sliced
12 dried ready-soaked apricots, halved
1 tablespoon cornflour

STEP ONE Put the lamb in a saucepan and dry fry until brown. add the onions and mushrooms, cover the pan and leave to cook over a low heat for 5 minutes
STEP TWO make up 1/2 a pint of stock using stock cube, then add the mango chutney and madras curry paste. stir into the lamb and vegetable mixture together with carrots and apricots
STEP THREE Bring to the boil and simmer for 20 minutes. mix in the cornflour with a little cold water, then stir into the curry until it thickens and simmer for a further 10 minutes, or until the meat is tender.

I am guessing that on the apricot curry the apricots are part of the b choice as dried apricots are not free?

Will have to go shopping to get some more stuff have the usual spices but not all on list.

Emily - I assume that the syn values you are giving are per portion, but how many portions is each recipe supposed to make - 4?
