Does anyone have a recipe for Snickerdoodles (cinnamon cookies)? Can only find ones online from the States using vegetable shortening and I have no idea what that is! I had some last week and they were so nice I really want to make some myself!

Here you go.

250g plain flour
1/2 tsp nutmeg
3/4 tsp baking powder
1/2 tsp salt
125g butter at room temp.
100g plus 2 tbsp caster sugar
1 large egg
1 tsp vanilla extract
1 tbsp cinnamon

Preheat oven to 180 C

Combine flour, nutmeg, baking powder and salt.
Cream the butter and the 100g of sugar, then beat in the egg and vanilla.
Stir the dry ingredients into this and beat well.
Spoon the remaining sugar and cinnamon onto a plate.
Take walnut sized pieces of the dough, roll in palm of your hands, roll each ball in the sugar and cinnamon mixture, place on baking sheets.
Bake for 15 mins until golden.
Rest for 1 min before placing on a cooling rack.
Makes approx. 32.

I just made these (NIgella's) = they are YUM however I would not use Nutmeg, it overpowers the vanilla and cinnamon, so much so, you can't even taste them.....very mooreish...like a biscuit exterior with a scone interior....taste like doghnuts.......
