What evening meals do you make in the summer?

I did chicken salad and veggie chicken salad for me last night, but thats all I can think of!!!

Or do you cook the same kind of meals all year round?

no, I have summer meals for around a fortnight each year in the UK, and winter ones for the rest of the time! If the heat wave goes on for too long, I tend to run out of ideas.

Cold cooked vegetables, light soups, that sort of thing.

we have lots of fish, so last night had salmon with spinach and pine nuts. Or some form of salad or chicken with steamed vegetables or maybe a stir fry.

I roasted a chicken last night then had it with salad and new pots (as someone else said)

Tonight, we've got jacket pots or quiche with salad.

Meals just tend to be 'lighter' in the summer for me. I'm not overflowing with ideas though (as you can see)

bbqs at the moment (every night - so easy thanks to my amazing Weber chimney charcoal lighting thingy! home made burgers, lamb kebabs, fresh tuna

I tend to make more spicy/moroccan-y food in the summer - spicy chicken with couscous and veg, more veggie stuff.

Moussaka and salad last night, marinated chilli pork and salad tonight, homemade pork and apricot burgers and salad tomorrow prob....

Anything easy and a bit lighter...cannot be rzzed cooking too much in humid weather!

i tend to go for easy, quick things in the summer especially salads, jacket spuds, pasta, all things that are lgiht and simple that you dont have to slave over the stove for long!

greek salad and lamb kebabs
cold meats, new potatoes and salad
lots of BBQs
salmon with a watercress sauce
couscous

my trouble is that the kids don't like salad, so prefer to have vegetables with everything. Tend to have to do veg for them and salad for me and dh, so last night we had cold roast beef, new potatoes and salad, and the boys had peas, carrots and brocolli instead.

I've replaced potatoes with toasted Pitta bread. Lovely with lamb, chicken, cold meats of all types and salad. Makes a really quick supper. (particulary with lamb kebabs and natural yogurt).
Cous Cous with spring onions and roasted veg is also yummy at this time of year and not too heavy in the heat.

o often do veggie egg pittas like on that addvert or for a light dinner i do big club toasted sandwiches with bacon lettuce and tomatoe but you can do any fillins also really good with big bagguets/pitta breads rolls ect.

We are BBQing most of our meals at the moment. I haven't prepared anything particularly elaborate (as I might if we had people coming over) - so it usually something like: salmon marinated in soy sauce, tuna marinated in oil and herbs, lamb steaks, sirloin, chicken marinaded in a Nandos' type sauce, meat from Sainsbury's BBQ range, hamburgers and hotdogs.

I'll make a cous cous salad, pasta salad, Greek salad or taboulleh to go along with it, or perhaps some new potatoes.

Other than that, we'd have much the same as we have at other times, but trying to use seasonal veggies.

a good old george formy grill is great for chargrilling chicken and making other fast easy meals..we too have not even a sniff of a garden so have to make do. its also great for doing ciabatta paninis with things like mozarella and chorizo, or goats cheese and sundried tomatoes...

ooh and forgot my favourite..which is great hot or cold
''hit the pan salsa'' with pasta,
basically chop loads of fresh tomatoes (peeled if you can be bothered), heat in very hot wok until they form a paste, then add the juice of two oranges, garlic, a mild chilli and some spring onion..works great with tagliatelle..and very light and refreshing for a pasta sauce!

he he..now i'm getting carried away
taco shells with a few different fillings for people to pick and choose from is always popular
i like to do a cous cous with olives and salsa mixed in, a bowl of dressing made from chopped cucumbers in yogurt with lots of garlic, a huge mixed leaf salad, strips of chicken and beef, roasted veggies and another dresiing with blended aubergine and walnuts...

my fave summer pasta dish is cherry tomatoes cut in 4 and mixed with pasta shapes, chopped garlic clove, feta cubes, basil, lemon juice and olive oil.
must be mixed together while the pasta's still hot.best eaten at room temp.

so easy, lovely jovely

oooh..and grilled skewered chicken with chunks of mango, served with spicy rice
or...skewered chunks of chicken wrapped in bacon with a dab of wholegrain mustard..
