glut of aubergines- recipe ideas?

got a bag of 4 aubergines for 45p from our local supermarket yesterday - can't resist a bargain!they're not going out of date or anything, just being sold off due to damaged packaging apparently.

now i don't know what to do with them all. any ideas? TIA

jamie oliver caponata

IME it's easy to make, just chop and add to saucepan then simmer. Makes my mouth water just thinking about it. You could make a huge batch and serve with ciabatta.

love MN! thanks SSB and Meglet! deelish. forgot I've tried that bake one before and it kind of evolved into a scrummy veg lasagne. might give the caponata a go for something new - just need to find herb vinegar. could I make my own.... (gets off lazy bum to do own google search)

I just use a splash of balsamic vingegar, it still tastes fine. Although I'm sure it tastes even better with herb vinegar but I forget to buy it.

ooh just remembered something I used to make - you grill the aubergine, or put it directly on gas flame till completely blackened and flesh is soft inside, then scrape out flesh and mix it with something - could have been tahini? - sorry might have to google this recipe - and use it as a dip. Used to be delicious!

yes it is tahini, also garlic and lemon juice, see here lovely aubergine dip

Brush with oil & cook in oven for 30 minutes or so. Then chop & add to veggie curry. It goes all squishy & smoky & is lovely.

Or scoop out flesh, cook with onions, peppers, mushrooms. Mix in a few tsp of pesto. Pile back into scooped out aubergine shells, top with grated cheese, cook in oven.

Oven-baked ratatoille (a Delia-thing I think)
Chop up aubergines, tomatoes, courgettes, onions and peppers. Mix with olive oil and garlic and bake.
Really yummy and can be served in all sorts of ways - with pasta, with rice and haloumi, in wraps just too start with. Drooling now, need to go to bed before I raid the kitchen
