Chocolate Sludge Cake

CHOCOLATE SLUDGE PUDDING

1 cup of self raising flour
1/4 cup of granulated sugar
Pinch of salt
2 tablespoons cocoa powder (I use drinking chocolate)
1/2 cup milk
1 teaspoon of vanilla essence (optional)
2 tablespoons melted butter
Topping: 3/4 cup of brown sugar
1/4 cup of cocoa powder

Mix flour, sugar and cocoa.
Add milk, vanilla essence and melted butter
Put this rather stiff mixture into a deep ovenproof dish. Well greased
Mix brown sugar and cocoa for topping together and scatter over pudding
Pour 1 3/4 cups of hot water over the whole lot (do not mix)
Cook for 50 mins approx at gas 4 (350F/180C)
Eat hot

Serving suggestion: eat with cream and when kids are in bed

A mug for measuring will give you about 3 servings, I use a normal tea cup and his is great for the two of just. WARNING it is rich but the sauce calms it down a bit
