I bought a bunch of beetroot....what do I do now?

I have little time and like recipies I can just cook, sit and eat

Oh - this is easy! I have the best recipe - though think it was Jamie's originally....

Take a long piece of kitchen foil (ah, must be Jamie - he does this) - and double it over so you can make a parcel.

Put in the centre of the foil your beetroot (washed and scrubbed, but not peeled, and the smaller the better (golfball size is good). If your beetroot is large then half or quarter first.

Add to the beetroot - 3-5 cloves of garlic, bashed or roughly chopped, a generous slug of olive oil, about 2 tablespoons of balsamic vinegar, a big handful of chopped fresh herbs (thyme and parsley work well) and salt and freshly ground pepper.

Seal up your foil parcel and add to your roast about 1 hour from the end at about gas mark 4 (no idea of electric - 180 degrees maybe?).

The yummist accompaniment to roast dinner or any dinner in fact - and 5 mins prep.

NB My 9 and 7 year old girls love these - as do dinner party guests!

Boil (or roast)
Peel
Dress with mint heavy vinaigrette, crumbled fetta and crumbled walnuts.
Serve with flat bread, grilled lamb and chilled white wine

Peel, chop into quarters and roast with the potatoes. Easy and delicious.
