Have just made a roast pumpkin soup but it is a bit tasteless. Any ideas?

I roasted pumpkin and sauted some onion. Added veg stock and a jar of roasted peppers. Simmered. Then blended. It is a bit think so will need some extra liquid anyway. It is for a dinner party tomorrow so needs to be yummy. And isn't at the moment!

So. Do I add more veg stock and maybe some salt and pepper and a little cinnamon?

Or do I add some coconut milk? And something else?

Wouldn't put in coconut - could be a bit weird - but the other stuff yes, maybe cumin rather than cinnamon though.

Also try a teaspoon of sugar or honey.

Would it suit thyme? or Sage (raw or quick-fired leaves).

My pumpkin soup usually has one of these herbs in it.

also immediately thought cumin.
or any of meltedmars suggestions...
bit more salt? have you seasoned at all?
touch of garam masala might even do it (not to make it curryey but just a tad tastier)

Cumin! Great idea. Thanks. The recipe didn't call for any seasoning. It is a recipe from on here actually. I think I will add salt and pepper and some cumin. Thanks.

The reason I suggested coconut milk was that I know I have seen a recipe for pumpkin and coconut milk somewhere! And I have had a pumpkin soup with a hit of cinnamon somewhere too. But cumin will be good.

I made a pumpkin soup last year and added some chunks of lightly fried chorizo as this gives it a bit of a kick and makes the texture more interesting, here

I add chilli.paprika.for seasoning

and coconut milk

but also tomatoe purree and passatta

basically anything red goes in the roasting tin along with garlic

Can't do chorizo Buntytea as one guest is veggie but will bear that in mind for the future as it sounds yummy.

Am off to get DS from school in a few mins but will fiddle when I get back.

It's not horrible just bland and perfectly fine for me so if I can't get it right I will do something else for tomorrow and just freeze it in batches for us.

and sour cream or creme fraiche on the finished soup and pumpkin seeds or pumpkin oil

I would second a nice swirl of creme fraiche just before serving.

That's ok Buntytea - no need to be sorry - I hadn't mentioned the veggie-ness! And I will try the chorizo next time.

Well I added some chilli, cumin, garlic and salt and pepper. Then added a dollop of creme fraiche, a drizzle of pumpkin oil and a sprinkling of fresh coriander to each bowl as I served. It was yummy and a few people had seconds!

I add ginger, garlic, coconut milk. I also make an oriental style pesto (whizz up coriander, basil, lemongrass, lime zest and a bit of garlic & ginger with lime juice, salt, mild olive oil, fish sauce) and put a dab of that on top for the guests to swirl in.
