i normally swap between the two depending on how frugal im being what does everyone else use?

posh white sauce lol- just bog standard white sauce with s and p and a bit of grated nutmeg.

i make bechamel with cheese. So two layers of red sauce, two layers of whit AND cheese on top! Sometimes two or even three types of cheese!

Well, i am hypocalcaemic. that's my excuse and I'm sticking to it.
