simple question: DOES PESTO FREEZE WELL?

got a glut of basil - if I freeze pesto, will it come out the other side?
rapid responses appreciated! TIA

Never done it but apparently it's not a problem.

If you google 'pesto recipe' all the sites that pop up suggest freezing.

Found this for you:

Both pistou and pesto freeze well. I recommend freezing in tablespoon quantities, allowing to come to room temperature before using. If you are freezing larger quantities, such as small tubs, then omit the cheese and add this once it is thawed and room temperature. Covered with a little olive oil, it also keeps well in the refrigerator for several days to a week. After this time, it may become bitter and loose its bright green colour

Pesto apparently keeps in the fridge for up to a month if you cover it with a layer of oil

soupe au pistou is a provencal speciality - basically soup with haricot beans, pasta bts, bacon, and pistou - which I hought was just the provencal name for pesto...? soupe au pistou is YUM
