Haloumi - what shall I do with it?

wrap it in leaves or parma ham and "bbq" i guess that would be fry in the smallest amount of olive oil?

Chargrill or fry and add to a salad (with capers and lemon dressing)or serve with.....well anything you like really

it's really nice just cut into slices and fried in a non-stick pan (with perhaps just the merest dash of oil if it looks like sticking). Then serve drizzled with sweet chilli sauce.

This is my favourite way of serving, and I do it as an appetizer at parties. You do have to eat it hot, or it goes rubbery. But I also fry cubes and add to couscous with raisins, pinenuts and aubergine.

Nice with olive tapenade and salad.

I make a pasta dish with haloumi, mushrooms, olives (sometimes), chilli, parsley and olive oil. I dry fry or grill the haloumi separately and add near to the end of cooking as it releases quite a lot of liquid.

or you can add cubes to vegetable kebabs at bbqs. You have to be a bit careful or the halloumi falls off the skewers though, as it has kind of natural veins running through it, so you have to be careful how you skewer it (not sure if that makes sense!)

I roast some veg (chopped peppers, corgettes, red onion etc) and then mix that into some couscous and then dry fry the slices of halloumi in non-stick pan and serve on top of the roast veg and couscous.

I could eat that every day smile

Mmmm just dry fry it in a pan til the milky juice starts to run then evaporates leaving yummy salty cheese toffee stuff stuck to the pan, and crispy-edged halloumi with a soft middle. Eat while it's still squeaky, with a squeeze of lemon. Mmmm I want some now! It's my desert island cheese. grin

dry fry it and in another pan fry leeks in butter with cumin seeds and lemon juice then mix it all together
