What can I do..........with beef mince......

I plan my meals using a menumailer, and todays sounds really tasty - BUT it's very much a 'hot' meal and pretty heavy going for such hot weather.

The only meat I've got left in the house is the mince (get my shopping tomorrow morning) so I need to come up with something 'simpe' and 'light' using it...........any ideas????

Problem is we had burgers on Sunday........

cottage pie type thing or beef tomatoes stuffed with some mince type stuffing thing

What about meat loaf if you want something that you could have with a salad to keep it light?

oooo no I HATE gin - had a bad first experience of Alcohol as a 15yr old with it and hated the taste since.

add chinese veg, ginger, soy and chilli and serve it with lettuce leaves to make wraps...
