Mix pesto and philadelphia and smother over chicken breasts, add sliced toms and cover in cheese and bake. Yummy!

Mix double cream, lemon juice and chopped fresh coriander, pepper and smother over white fish fillets and bake.

Mix honey and whole grain mustard well cover thin pork fillets and bake.

These are my 3 easy peasy ones, they are truly delicious and take no time at all!

get some noodles going. flash fry a tuna steak each in a bit of lemon or soy. while simultaneously flash frying a stir fry pre-packed is quickest. whack in a half jar of thai green curry paste. add in those noddles

i do this twice a month. 10 minutes, with only 3-4 minutes clear up time:-)

superb quick pud as well: mixed fresh berries, rachel's low fat vanilla yog and a scattering of almond flakes.

whole organic chicken legs in a roasting pan with a cut up aubergine, courgette or two, halved new potatoes, mushrooms, drizzle of olive oil, sprinkle of sea salt and oregano, bake for half an hour.

salmon fillets marinated for 15 mins or more in lime juice, grated ginger, coriander, tbsp soy sauce and tbsp nam pla (thai fish sauce) then flash grilled. when they are done chuck the leftover marinade on the grill with a bit of water from the kettle and reduce a bit for sauce. serve with rice or (my fave) that tiny pasta that is shaped like rice and some green beans.
If you take out the lime juice and substitute orange juice you can do the same with duck breasts, but marinade for longer, and roast under a hot grill until the skin is crispy but breasts are still pink in the middle. (discard skin if you are being low fat). THen slice the duck breasts quite thinly and drizzle the marinade reduction on them. You can serve this just with a baby spinach salad and it is yummy...

also couscous - pour out however many grams your packet says for 2 people, then mix in half tsp of ground cinnamon, half tsp of ground coriander and quarter a tsp of ground cumin. Then pour however much boiling water your packet says on top, stir, and cover, and leave for a few minutes. When it is cooked, stir in half a tin of chickpeas and some grilled pinenuts. This is brilliant (and filling in a healthy way) with grilled lamb chops or fillets, and soaks up the gravy/juices from lamb beautifully. Plus green salad or veg. Whole meal takes a total of 10 min max.

quick one 4 the bbq buy fresh hamburgers or make them if you can be bothered, place a lump of blue cheese into the middle and roll into a ball and chuck on the bbq.

seared tuna steak with cooked lentils - stir some mint/herbs and yogurt into the cooked lentils and serve with a big dollop of hummus

sounds just like my menu
made this last week
chicken breast marinate in nat yog with tandoori mix -i cheated and bought mix
marinate for least 2 hours in fridge
put on kebab skewers and sizzle in a griddle pan(i used george fman)
serve with pilau rice(i used saffron cardomom cinnamon and bay) mango chutney (or similar ) and nan
yum
am going to try it with lamb too
also made kebabs using a morrocan spice mix as marinade easy and tasty !!
