Quick and easy vegetarian recipe wanted please

I have an extra 2 children for tea tonight (vegetarians) and ds will have approx 15 minutes to eat his tea, get changed and go out again! I can either give him a sandwich to be going on with then he can have his tea when he gets home (8pm) or try and do something for everyone but it needs to be quick and easy and made from usual ingredients in cupboard. I need some ideas please!!!

Veggie egg fried rice? With whatever veg you have, plus some peas.

Stir fry veggies and noodles, works well with red peppers, onions, spring onions, courgettes.

If you have any leftover cooked potatoes, a big Spanish omelette. Fry some veggies (onion, courgette, peppers etc) with garlic, oregano, add sliced cooked potatoes. Then add the beaten eggs, allow the bottom to cook, grate a bit of cheese on the top and brown under the grill. Cut into wedges.

Baked potatoes (if you can put them in in advance obviously) with baked beans, grated cheese, etc.

pasta, a tomato sauce and grated cheese with an additional veg the kids like
cooked pasta, stir a tomato sauce into it pour over a cheese sauce or just grated cheese and bake till melted
macaroni cheese
egg and chips
omelette and the usual
veggie pizza
french bread or pitta pizza - split, spread tomato sauce, choice of veg and grated and then grill
veggie soup and toasted cheese sandwich
A lot of pasta and cheese but I know they are usually to hand

Thanks for the ideas. I attempted to make egg fried rice. It looked vile but 4 out of the 5 children ate most of what they were given once I'd flavoured it with soy sauce!!!

I look after some picky eaters and it makes tea-time very hard sometimes.
