Courgettes

Lovely neighbour has given us some courgettes from the garden but none of us actually like courgettes. Does anybody have a soup recipe, or something, that will make them taste less like courgettes and more like something lovely?

It's the texture I don't like, so I think a pureed soup would be good, maybe?

I know that you can make courgette cake, similar to carrot cake.
I do not have a tried and tested recipe though.

Mmm I like brie but dp dosen't and dd1 doesn't eat cheese if she can possibly avoid it.

Soup deffo the way to go though, I think, unless anybody has a fab t&t cake.

I'm not a fam of courgettes as a rule but I make a rissotto with courgettes (diced) , peas and leeks with parmesan that is one of my favourite meals. You don't really notice them.

MIL makes a great creamy courgette soup which gets its creaminess from a couple of dairylee triangle style cheeses! Don't know the exact recipe, but it's delicious.

I've made courgette and rosemary soup which is lovely it was a Claire MacDonald recipe but I can't find it online but this looks pretty similar here

Thank you - both of those sound good. Think I'll make the rosemary one, as dp has some home-grown rosemary - and perhaps offer triangles on the side?!

It is made. I fried an onion, a few potatoes and one huge courgette with a couple of garlic cloves and some black pepper. Then I added some stock and cooked it for about ten mins until the vege was soft. I blitzed it then added chopped rosemary and a bit of Philly to make it creamy. It is v nice and even courgette-hating, cheese-hating dd1 likes it!

Doh, got to this too late. Have a very nice recipe for courgette muffins. They're sweet but have courgettes grated in them. You'd never know and I can get veggies into DD without her knowing

We do courgette muffins too! So far all kids like them, except one who looked at me as if I was from another planet. She thought it was chocolate muffins until I disabused her of the notion ... She did eventually eat them too though. Let's see if I can find an online recipe ...

Aha! I typed it out for a friend once upon a time:

250g/8oz plain flour
2 tsp baking powder
1 tsp bicarb of soda
1 tsp salt
250g/8oz caster sugar (I use dark brown - tastes nicer)
25g/1oz pine nuts
25g/1oz sultanas
175/6oz mashed ripe bananas (about 2)
3 large eggs, beaten
250g/8oz grated mixed carrots and courgettes
150ml/5fl oz sunflower oil (I use 4 fl oz only - still works)

  1. Preheat oven to 175C, line a 9in/22cm cake tin.
  2. Sift flour, baking powder, bicarb and salt into bowl.
    Add Sugar and pine nuts and sultanas. Mix well.
    Add mashed bananas and beaten eggs.
    Add oil.
    Stir in vegetables.
    Mix to thick, slightly lumpy mixture.
  3. Spoon into cases and bake for 30 mins.

We make courgetter fritters which are nice.
And put it in rissotto.
Stuffed courgettes too.

if you make carrot and courgette soup you get the courgette taste without the texture which I hate too. just throw some carrots and courgettes in a pan with an onion and a stock cube. it's not gourmet but low calorie and tasty.

Thank you. The girls have just eaten a big bowl of it each but it looks a bit too green for my liking!

The muffin recipe looks great.
