ok, what can I do with a bag of frozen grated courgettes, about 4 big ones???

Was just about to make courgette bread, which actually sounded exactly like a carrot cake recipe, sweet with cinamon etc, which I didn't fancy, so I've frozen the courgette to make something another time, but I'd be really grateful for any ideas.

Take it to the end of the garden and lob it over the fence as hard as you can. Best thing to do with courgettes..

I love grated courgette lightly fried in butter and then mixed with creme fraiche and blue cheese on pasta.

I always make courgette cake - Delia's carrot cake with courgettes instead of carrot - with my glut, but don't know if it would work with frozen ones. Do they freeze ok?

Courgette Fritter

sieve flour into a bowl
whisk 2 eggs into another bowl, salt and pepper and add plenty of freshly grated parmesan (optional but makes a huge differnce),
put 3 or 4 tablespoons of olive oil in a frying pan, heat to fry

slice courgettes (either way)
put each slice in the flour bowl
then the egg mixture bowl
then into the pan

when golden brown, serve

and great the next day cold too

The fritter recipe is even nicer with 200g White crumbly cheese and a teaspoon mint.

Courgette risotto

courgettes 0 grated 0 put 1/4 aside for garnishing
arborio or carnaroli rice
a lemon
grate lemon zest
olive oil - tablespoon
freshly grated parmesan
very finley chopped onion
good vegetable stock (enought to make risotto - see the rice pack for details as they can differ)

soften the onions - do not brown them
add the rice and coat in the oil - cook for a minute or two
start adding the stock as per instructions to make the risotto (they vary)
about half way through cooking time, add 3/4 of the grated courgettes, the grated zest of 2 lemons and the juice of one or two lemons (according to tast)
when the rice is cooked, add plenty of parmesan and stir.
cover and let stand for 3-5 mins

serve and garnish with the remaining grated courgette.

BONUS all the little people i've cooked this for, love it!

ah, brilliant!! That's really good, think will try fritters and risotto for starters. No idea if they freeze ok, will let you know.
