blueberry pancake recipe (foolproof) needed

ie fat US style (with maple syrup), not skinny Brit/French crepe effect.

Can anyone do this? Without buttermilk, or other sorts of ingredients only available Over There? I've tried loads of different ways, and all have been eaten with (possibly polite) greed, but they've never been quite right, really - not cooked through, or not thick enough ... you know.

So, anyone? It's half-term and I feel like putting the effort in for once.

you can buy butermilk in most supermarkets... with the cream etc

nigella does some great pancakes but instead of using butter milk, she puts 1/2 tsp of vinegar into warm milk... sounds odd but they are divine... will get recipe for you later..

I had a go with the recipe mancmum suggested. Still weren't up to my dreams, but that is probably me. They were certainly gone again in seconds & we could've eaten twice the number.

binkie, Blueberry pancakes

1 cup flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup yoghurt/sour cream (and I have used petit filous when stuck!)
2 eggs
4 tbsp melted butter
1/4 cup milk
1 cup blueberries

Preheat electric griddle to 170C or heat a frying pan over medium heat. Melt butter over low heat, set aside. Stir dry ingredients. Add yoghurt/sour cream and eggs to dry ingredients and beat until blended. Add melted butter and milk. Beat until batter is smooth. Ladle batter onto griddle/frying pan according to the size of pancake you want. Generously sprinkle blueberries onto pancakes. Cook until small bubbles appear on surface, Turn over and cook until done. Serve with warm maple syrup and powdered sugar.

These come out exactly like blueberry pancakes I got in America!
