Recipes for courgettes, maybe some kind of frittata for a picnic please

Hellos,

I am having a playdate at home tomorrow and plan to do a picnic in the garden for tea. I'm trying to think of some good finger food that won't make too much mess. Would also like to use up some courgettes.

Does anybody have any ideas?

Riverford have a courgette and parmesan fritter recipe which even my ds who hates courgettes will eat! I use edam instead of parmesan though.

Mix the following together:
500g grated courgette
1 egg
50g flour
1 clove of crushed garlic
salt and pepper to taste (optional)
50g grated cheese

Heat some oil in a frying pan and put about a table spoon of the mixture in to make individual fritters, I can normally do 3 or 4 at a time. Fry for about 3 minutes or so, I never use a watch when I fry eggs so can't say precisely how long. Turn over to cook the other side until golden brown.

Drain excess oil on kitchen paper.

You should be able to make about 8 fritters from this recipe.

slice them thinly and then griddle them, lovely

or put them in a Spansh omelette and cut into chunks cold

Try Kolokythokeftedes. Yum. You can substitute any type of cheese really - I use parmesan and edam.

Or you can just serve dessert - veggies disguised as a chocolate treat.
