If you have a vacu-vin (stopper plus pump to extract the air) it's fine in a cupboard for quite a few days, I wouldn't leave it in the daylight though.

Well, I always keep a bottle of white wine in the fridge for cooking - I find that if I leave it outside it goes bad quite quickly. Would you be able to decant it into a smaller bottle and keep it in the fridge that way?

For red - I find that lasts fine if you leave it out in a cool dry place as long as you have a decent bottle stopper... Having said that, a bottle just died after leaving it out for 4 days or so, but I leave in Italy and we were having a heatwave (32C +). I am not sure that is likely to be a problem in the UK grin
