The secret is a good chorizo which you fry gently first to release the smokey paprika flavoured oil then cook everything else in that oil. Saffron is a key flavour too. I use a sachet of paella mix which I stock up on in spanish supermarkets when I go abroad. My boyfriend does his from scratch with saffron threads in his stock.
