2 lb of not very ripe apricots..

How can I cook them?

I´ve already roasted some and blasted them with Greek yoghurt (yummy).. whta can I do with the rest? I want to cook em now rather than wait till they go ripe (and bad?)..

don´t like apricot jam.. thanks anyway!

am now doing a delia cobbler, but any flavours that marry well? would like a bit extra punch..

I'd poach very gently in orange juice and probably eat most of them in one sitting.
