Wild mushroom? Fry some mixed wild mushrooms in some butter, season & add a dollop of single cream and a pinch of mixed herbs

I did one similar to Iklboo's recently and added a wee dollop of Dijon mustard. Delicious. We had to stop my Mum from licking the pot.

With a nice fillet I would probably be happiest just coated in black peppercorns which had been bashed in a pestle and mortar. I absolutely love bearnaise sauce as well but I very rarely made it as it is such a rat race to make.

Thin slice or gorgonzola/stilton/other blue cheese on top for the last minute or two of cooking - just gorgeous!

We are having that tonight for DH's 30th birthday dinner

i love cafe de paris butter (gary rhodes recipe is good but there must be others).

I make it (250g) leave it in freezer and hack off a bit now and again. Yummy!

Sorry - have only just seen this - realise it may be a little too late now!

My favourite steak sauce is a gorgonzola one that one of our local restaurants does. I think it's simply double cream heated with some gorgonzola till it melts.
