I want to make Mrs Beaton's banana bread (as I have a few over-ripe bananas and I've always enjoyed eating other people's banana bread) but the recipe calls for a tbsp of lemon juice and I haven't got any so ...

Would it be best to:

a. just miss it out
b. use lime juice instead
c. wait until tomorrow when I can get to the shop and buy some lemon juice?

Also, do you think I could use duck eggs instead of hen ones - and how many? The recipe calls for 3 hen eggs ...
I do have hen eggs but I also have quite a few duck ones.

TIA smile

cant see any problem using lime juice instead. Depending on teh recipe the juice may be used as an acid to help the bread rise so wouldnt leave it out.

If you use duck eggs then the bread will be very much richer I'd say but would prob still be yummy. How many is anyones guess. Depends on the size fo hte eggs really grin

Thanks Shaun!

I went with lime juice and 3 duck eggs as they aren't overly huge - I didn't think 2 would be enough.
I've just put it in the oven so time will tell smile
