butterless baking

Does anyone have any cake or biscuit recipes that don't have butter or marg in them?

A genoa sponge doesn't have marg.

Whisk 3 eggs with 3oz of caster sugar until it holds the shape of the beaters, or you can make the figure of 8 in the mixture. (use electric mixer)

Then fold in 3oz of sieved plain flour.

Divide into two sandwich tins that have either been greased or lined with paper.

Bake for about 12 - 15 mins in moderate oven. Turn out and cool on wire rack.
Sandwich together with jam and whipped cream.

the nigella party cake doesn;t have any butter in either

Whisk 6 egg yolks with 200g caster sugar till creamy,
fold in 200g ground almonds and the zest of a lemon.
Whisk 6 egg whites in a anotehr bowl, beat a spoonful of white into the yolks and then fold the rest in gently.
Pour into a 1.5l tin (she uses a brioche tin but I don't have one so use a ring mould thing) and bake 1hr 160 C

NB are you trying for dairy-free or low-fat?

Feel the need for cake but am holding out as far as I can until pay day. I just don't want to buy butter unless I have to.
