Veggie mums-can you recommend me a book of veggie food my kids WILL eat-failing that some meal ideas

We only eat meat 2 or 3 X a week but would like to reduce further. In a bit of a veggie rut as the dc are 5,5 and 4 and one is picky and a total carnivore.

At the mo I do lentil dahl,veg and popadoms,jackets,corn fritters,frittata,fried rice,veg curry.

A fantastic veggie recipe book would be good as time is short and I find pulling from 1 book cuts down time. Any great kids veggie ideas though would be greatly appreciated.

what about pasta with homemade tomato sauce, garlic, herbs and packed with veg (such as onions, courgette, mushrooms) i make my ds it to take for school and sometimes add grated cheese to it (a bit like a bolognaise but without hte meat) i mix the pasta into the sauce.

home made pizza topped with sweetcorn, mushrooms, onions, courgettes, tomatoes served with salad and home made potato wedges roasted in the oven. (we tend to make this as a treat once a month on a Saturday evening)

chunky veg soup/casserole with uncut bread and butter

Cheese souffle - they like the magic that makes it rise up like that!

Macaroni cheese.

Omlette

Eggs en cocotte

Pasta carbonara without the bacon - use courgette, leeks and cheese.

Actually, mine all contain eggs or cheese!

I do spinach and feta pasties too which they love with baked beans.

It's just a sheet of ready rolled puff pastry. I put some washed spinach in a saucepan and cook down,chop it and add crumbled feta. Then put in pastry squares,fold and cook!!!!!!

Another good thing to do with ready rolled pastry is a kind of pizza/tart thing. Leave about an inch round the outside, spread the middle with tomato puree or sauce, add veggies and cheese and cook until the edge is brown.

I've been working on homemade veggie burgers and what seems to work is mashed potato mixed with cooked chopped veg (carrots, peas, green beans etc), a bit of mashed beans (butter beans have worked) and some cheese. Form into burger shapes and dip into beaten egg and dried breadcrumbs then fry.

get this - good receipes ranging from store cupboard all the way through and usually quick and easy - can normally pick it up in supermarkets (Asda and Tesco) cheap...
