does anyone have Sauce recipes?

hi all,

well DH is thinkin he's a bit of a jamie oliver at the minute in the kitchen, and we're doing v v well with our fresh meat from the butcher veg and no processed crap, althou he's starting to moan about his sauces, he's getting board with them allbeing tomato - ie chik pasta and tomato or spag bol, for the moast we've been chucking stuff intot he pan and seeing what comes out, but he's really after some new recipes. so MNetters I told him u guys could help.......

made a nive pasta fish this week - really simple:
Serves 2
slice courgettes quite thinly, cook gently in olive oil with small pieces of smoked bacon and 3 cloves garlic (add garlic a bit later as you don't want it to go brown).
Add the whole lot to cooked spaghetti, adding more olive oil to cover all the pasta nicely and about 2/3 handfuls of freshly grated parmesan.
Scrumptious.

Another good one: cook frozen peas for 5 mins in butter (in a frying pan) then add leftover bits of chicken, creme fraiche and parmesan. Add to pasta. Can add sliced cherry toms too at last minute if you want.

Chop up stacks of mushrooms, garlic and onion finely, fry gently in oil, add a little flour and cook it off, then add a quarter of a pint of so of vegetable stock and simmer for ten minutes, add more stock of you need to. Finish off with some milk or cream and heat through gently. You can add bacon or ham to this as well, if you like.

sorry guys should add i'm on weight watchers as well, (so all the veg/garlic is 0 points but oils/ cream are all points, as is flour which is why our sauces have been really really thin.

hmmm, bit tougher then....could you use fromage frais/yoghurt/milk?
what about smoked salmon + capers with low-fat cream? is that allowed>

otherwise, the mushroom one below can't be v. fattening, surely?

well oils I can have 1 TSP for 1 point, and flour 1 tsp for 1 point as well. (but I can only have 20 points a day) might go and look at the WW threads.

your tomato sauces don't have to be thin, even with no fat. Just let them boil down a bit for a nice thick consistency....
