Found a piece of bone in shoulder of lamb lurking in the freezer.. any nice ideas for cooking it?

Had my parents over for the weekend and my Mum did a fab slow roasted shoulder of lamb with tomatoes, olives, rosemary and courgettes. She said it was a Waitrose recipe.

I make this stew (cut it in chunks or leave whole and break up afterwards, delicious).

Jamie has a lovely recipe in his Jamie's Dinners book - I have done it a few times now

The recipe is for a 2.2kg shoulder and you roast for 3 1/2 to 4 hrs at 170/325/gas 3 in a casserole with garlic, rosemary, red onions, carrots, celery, leeks, bay leaves, a couple of tins of tomatoes and some red wine.

It is falling off the bone and so easy to serve when finished

lulu, smear it in harissa paste and then roast it on high for 20 mins and then turn it right down and roast for 3 hours or so. serve with cous cous.

those both sound good.. is harissa chick pea or sesame or nut based?

stirling i used your aubergine recipe the other day and it was delish

none of the above, it is a paste made of spices and oil. if you're going to want a sauce, fling in some tinned toms and chickpeas though.

Either smear with a paste of anchovies, rosemary, capers and pepper and roast in oven. Or cut and make into a stew with toms, then add pasta and sprinkle with feta.
