lots and lots of yellow peppers....

Bought a box of 'soup' peppers, seconds basically only cost £1.50 for several kilos. Have made chilli, veggie chilli and various other bits and bobs. Now still have lots left so want to make soup. Any recipe suggestions for a nice yellow pepper soup?

Nope on the soup I'm afraid, but can I suggest roasting them in strips with olive oil and serving with couscous and feta/goats cheese? Truly delicious.

Roast pepper soup is delicious. Just roast them halved and deseeded till the skin blisters, cool and take off the skin. Then blitz with some stock.
