Need to use this fruit... crumble?

Have got a small punnet of apricots, small punnet of blackcurrants and a fair amount of rhubarb that I need to use today before they're past their best, but probably won't have a chance to eat whatever I make for a few days. So was thinking of making a crumble and freezing it. But do I make the whole thing, cook it and then freeze it (won't the crumble go soggy?), or what?

Open to ideas other than crumble, too.

You can make the stewed fruit part of the crumble and freeze that - put topping on when you defrost it if you worry about it going soggy.

Thanks. I don't normally cook the fruit first so was wondering about that. OK so I can stew it a bit and then freeze it.

Flapjack crumble is om nom nom

Substitute half your amount of flour with rolled oats and use brown sugar

twill freeze beautifully
