oo I have a fantastically easy recipe for the most delicious banana gingerbread
I'll go find

i was going to say banana bread!

Google it - don't know recipe off by heart.

Otherwise, freeze them peeled and broken into chunks. If you blend milk with frozen bananas it goes lovely and think and milkshake-y. Quite healthy too, since it tastes as though it;s made with ice cream when really it's just milk and bananas.

This is good -
Banana loaf Grease and line a loaf tin. Sift 8oz self-r flour + 1/2 teasp salt into mixing bowl. Add 4oz butter, cut into small lumps. Stir in 6oz castor sugar, 4oz suktanas or raisins, 1 oz chopped walnuts and 4oz washed glace cherries. Peels and mash 3 large bananas and stir in. Then break in 2 eggs and stir in well. Bung into 1lb loaf tin. Bake at 180/gas 4 for about 1-1-1/4 hours. Delish! have made this lots of times. Nice with or wothout butter, cut into slices.

250g SR flour
2 teaspoon ground ginger
1/2 teaspoon Bicarb

oven 180 degrees / gas mark 4
need small roasting/brownie tin
greaseproof paper

brush tin with oil, line with paper
put butter, syrup, sugar in pan and heat till melted
mash bananas
beat eggs and milk

put flour ginger and bicarb in bowl
add melted butter/sugar
add bananas
beat until smooth
add egg mix
mix well
pour in tin and bake for 20- 25 mins

when cool drizzle some icing over the top,.

This really is so moist and delicious... the kids love it and it went down well at school cake sale. grin

We make frozen banana lollies!

Half the bananas and put on a lolly stick. Freeze till solid.

Melt chocolate then take frozen bananas out of freezer, dribble chocolate all over, roll in sugar strands if you like, then freeze again till chocolate is hard.

Yumm Yumm!
