courgettes, tomatoes, new potatoes

I am doing this zero food waste challenge and need to use up the following:

new potatoes
3 courgettes
oodles of tomatoes
an onion
a bag of salad leaves
celery

an ideas?

I have dried pasta, rice and fresh spaghetti which I could add. Also some beef mince.

Two small Ds's who don't really like courgettes/tomatoes so need to make it tasty for them!

tomato base sauce for pasta, blend the sauce so no lumps add either diced chicken or minced beef. (also works nice with tuna for a pasta bake)

pizza? tomato sauce courgettes cut really small, with salad

thank you will go with the pasta I think and add the courgettes in chopped really small

You could make a soup as the potatoes make a good thickener.

If you grate the courgettes on the small grater bit (they grate really well) then they practically disappear when cooked.

you could boil the potatoes and slice, blanch courgettes and bake with the tomatoes.
