What can I do with sun dried tomatoes in oil?

Can they be eaten straight from jar on say salad, or pasta?
Can you heat them? I was planning on lots of roast veg in oven could I add them to that?

Yummy on home made pizza together with Serrano ham and black olives. Bake the dough. Make pasta sauce with tomatoes, hint of finely chopped chilli, basil, oregano and lots of garlic. Spread over pizza base, sprinkle with cheese, rashes of serrano ham (or other cured ham) sundried tomatoes, olives, sweetcorn if you like that and pineapple for a sweet tang if you like.

The best pizza in the wold!

It will have to be my treat as I am trying to cut down on bread.

Then you can add some whole oats, and whole meal flour to your dough mix to cut down on the finer carbs.

I have never made my own pizza base before blush
I usually buy ciabbatta (sp?) and put my own toppings on.

If you have any of that ciabatta leftover, a sandwich with sundrieds and some slices of mozzarella is delish. I also like to chop sundried tomatoes up and throw a few into pesto pasta, to liven it up a bit. When you want a pungent snack, they're also nice to snack on from the jar, with a yummy wedge of parmesan.

When you've finished the tomatoes, you'll be left with a jar of tasty, tomatoey-oil, which is great for cooking with.

I have another recipe for you...

pasta with sun-dried tomatoes, garlic, chilli and cream.

chop the tomatoes into reasonable sized chunks, and gently heat over a low to medium flame with some chopped garlic and chilli. this brings out their maximum flavour and cooks through the garlic - but dont let it burn.

meanwhile boil some pasta - i find spaghetti works well, or penne - and when there's around 6 mins to go add single cream to the tomatoes. keep heat low and let it reduce and thicken a bit, then add the pasta to the toms and cream. Stir round and serve... with some garlic bread <salivates>

Fry some shallots and chopped chicken breast in the oil from the tomatoes until cooked through. Then add the tomatoes chopped and heat through then stir in some cream.

Can be served with your choice of pasta, rice, couscous or potatoes and crusty bread.
