I've been given one of those Wilton giant cupcake tins as a present. Was v pleased as they are expensive but.....it didn't come with a sample recipe. Does anyone know what size sponge mix it will take? I have looked online, but can only find a double choc recipe which isn't what I want.

TIA

If you just mean the large muffin style tins then, this is a brilliant recipe for cup cakes (NOT fairy cakes!!)

120g plain flour
140g caster sugar
1 1/2 tsp baking powder
45g butter, at room temp
120ml whole milk
1 large f/r egg
1/4 tsp vanilla extract

Mix flour, sugar, baking powder, butter & pinch of salt together in food processor or with a hand held mixer, until you get a sandy consistency.

Pour in half the milk & beat again.

whisk the egg, vanilla and remaining milk in another bowl, then pour into other mixture. Continue mixing for a couple of minutes, then divide mixture into 12 cupcake cases and bake for 20-25 mins in oven (180/fan 160/ gas 4.

For the vanilla frosting, mix together 250g icing sugar, 80g butter, 25ml whole milk and a couple of drops of vanilla extract - keep beating until it is light and a bit fluffy.

It's actually for 1 giant cupcake (to serve around 10) but this recipe looks good....I'll give it a go.

Thanks

I've not seen one of these cupcake tins, but I think a cake in a 20 cm cake tin is supposed to serve 10
so any of those recipes might be okay

Ah, a 4 egg sponge mixture....that's exactly what I needed to know. I can't wait to make it....what a shame that DH doesn't have a sweet tooth - just me and DD to polish it off

Am I having a stupid moment here....(think so but have to ask anyway)...here goes. Is there cake maixture in the top swirly tin or just frosting?..Assume it is cake mixture as Lizziesmum says 4 egg mix in both. That said how does it sit in the oven..confused blush..Thanks

I wondered that for a second but I think both parts are one tin, so the bottom half tin would balance it?

Pinner35 Fri 03-Jul-09 09:50:09

yes cake mixture in both halves. It's a biggie!!

It cake mixture in both halves (on one tin).

It stands about 10/12inches tall when made and put together.
