Butternut squash

I have a squash that I didn't use last week.

I'm trialling a veggie curry tonight that is with sweet potato - can I use the squash in the same way as using the potato? Would it cook in the same amount of time? Same size chunks?

If not, what can I do with a spare squash?!

I think you can use it the same or

Butternut squash soup
Mixed sweet potato & butternut squash mash
Risotto
Mediterranean veg (with peppers, onions, mushrooms etc)

i have a butternut squash looking mournfully at me atm. i got it in a veg box. i detest the things. am contemplating roast squash risotto

Onion squash is a better alternative to butternut squash. We do it in curry with chicken.

Spread slices of squash and onion on a baking tray, scatter chopped bacon and pinenuts over the top, drizzle with olive oil. Roast in the oven. Towards the end sprinkle with cheese and continue cooking until squash is cooked and cheese has melted.

My kids love butternut sq soup. I love it roasted with other vegetables.

Cook and mash the squash with no extra butter or milk, but with seasoning. (I roast mine in the oven, then peel it and whizz it through the food processor)

Form into balls, flatten slightly, dip in egg and breadcrumbs and fry on both sides.
