Dinner ideas for this (gorgeous) hot weather

I am loving this hot weather at the moment but finding it difficult to think of ideas for lighter but still fulfilling meals. Anyone help with their meal plans for the week?

New potatoes, veg and cold meat.

We are having quiche and home grown lettuce

I would just make up huge salads and chuck some meat on top. Bread rolls as well if they are absolute gannets.

Large spanish omelette with salad and crusty bread.

hummus, baba ghanoush (aubergine dip) etc with bread
tabouleh
New potatoes with garlic and yoghurt

I love a really good salad nicoise and if you put everything you're supposed to in it (eggs, potatoes and all the other lovely stuff) then tis quite enough on a hot day.
